Orange & Pistachio Chocolate Cake that is vegan and gluten free.

This recipe is wickedly delicious yet so good too. It is an exotic mix of pure bliss and healthy ingredients. Proving you can have your cake and eat it.

This vegan and gluten free quickie will delight your special someone and you too are worthy!

(Just 30 minutes from start to finish, makes up to 6 servings).

 

Ingredients

1-cup gluten-free All Purpose flour (sifted)

1/2-cup cacao powder  (sifted)

1-teaspoon baking powder

A teaspoon of salt

3/4 cup of frozen berries

1 cup canned coconut milk

1/2-cup coconut sugar or granulated monk fruit (low sugar).

1/3 cup of ground pistachios

1 teaspoon of orange extract

1/3 cup of cacao nibs

 

Method

Preheat the oven to 400 degrees and spray the cup cake molds with vegetable oil.

Mix together all the dry ingredients.

Put all the other ingredients in a blender and blend to a puree.

Whisk the puree into the bowl of the wet mixture into the bowl with the dry ingredients to make a batter.

Pour the batter into the molds until and bake for 15 minutes.

Remove all the molds from the oven, allowing it to cool for about five minutes. Once it has cooled, remove all the cakes from the molds. Decorate with a scoop of non dairy ice cream or sweet cashew cream and some chopped pistachio.  Enjoy!
